Ingredients

Base

1 can (400g) Canned chickpeas
1 can (400g) Canned tomatoes

Vegetables

1 medium Onion, diced

Herbs

2 tbsp Fresh coriander

Spices

2 cloves Garlic cloves, minced
1 tbsp Ginger, minced
1 tsp Turmeric powder
1 tsp Cumin powder

Liquid

3 cups Vegetable broth

Oil

2 tbsp Olive oil

Seasoning

to taste Salt and pepper

Heat olive oil in a pot over medium heat. Sauté onion until softened (3 minutes).

Add garlic and ginger, cook for 1 minute until fragrant.

Stir in turmeric and cumin, toast for 30 seconds.

Add canned tomatoes with juice and chickpeas (drained and rinsed).

Pour in vegetable broth and bring to a boil.
